Total time: 25 minutes · Yields 4 generous servings. Have everything chopped before you start the heat.
Once the oats are toasted, place them back into a large mixing bowl and pour in honey mixture. Stir very well until the oats are completely covered in honey mixture.
Pour wet granola out onto the non-stick baking sheet used for toasting oats, and place back in the oven. Turn off the oven, and keep the oven door open. Leave the baking sheet in the oven until it is cool to touch with bare hands. Granola should start to set, it should be hard to the touch.
Place the baking sheet on the stove top and allow granola to completely dry. Breakapart granola and store in an airtight container.
In a large bowl mix oats, crisp rice cereal and nuts until well incorporated. Pour out oat mixture onto a large non-stick baking sheet and spread out evenly. Place the baking sheet in the oven and bake for 15 - 20, until the oats are golden brown.
While the oats are toasting in the oven, use a small bowl to mix honey (real maplesyrup), olive oil (coconut oil), vanilla extract, and cinnamon.
